Ingredients
  

2 ripe bananas, mashed

1 cup crushed pineapple (with juice)

1/2 cup shredded coconut

1/3 cup vegetable oil

2/3 cup sugar

2 eggs

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tsp vanilla extract

1/2 cup chopped nuts (macadamia or walnuts)

Instructions
 

Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.

    In a large bowl, whisk together mashed bananas, crushed pineapple (with juice), oil, sugar, eggs, and vanilla.

      In a separate bowl, whisk flour, baking soda, and salt.

        Gradually mix dry ingredients into the wet mixture until just combined.

          Fold in shredded coconut and optional chopped nuts.

            Pour batter into the prepared loaf pan and smooth the top.

              Bake for 50–55 minutes or until a toothpick inserted in the center comes out clean.

                Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

                  • Shredded coconut adds texture and a tropical twist—feel free to toast it for an extra nutty flavor!
