Ingredients

  • 1 lb Ground beef Lean 80/20 or 90/10 preferred
  • 1 can Black beans Drained and rinsed
  • 1 can Corn Drained
  • 1 can Diced tomatoes With green chilies if desired
  • 1 cup Onion Chopped
  • 2 cloves Garlic Minced
  • 3 tbsp Frios seasoning Adjust to taste
  • 3 cups Beef broth Or substitute vegetable broth
  • Avocado slices For garnish
  • Shredded cheese For topping
  • Sour cream For topping
  • Tortilla chips for crunch

Instructions

Brown the beef:

  • In a large pot over medium heat, cook the ground beef until fully browned. Drain excess fat if needed.

Sauté the aromatics:

  • Add chopped onions and garlic to the pot. Sauté for 2–3 minutes until fragrant.

Combine remaining ingredients:

  • Stir in black beans, corn, diced tomatoes, Frios seasoning, and beef broth. Mix well.

Simmer:

  • Bring the soup to a gentle boil, then reduce heat. Cover and simmer for 20–25 minutes to allow flavors to meld.

Rest & serve:

  • Let the soup rest for 5 minutes before serving. Top with your favorite garnishes like avocado, cheese, or tortilla strips.
